Sometimes there’s no recipe, just ingredients and random thoughts. Most times my dressings were tahini based and that’s like main-lining butter. This is a simple shredded salad with red cabbage, julienne red pepper, steamed broccoli florets, radish and avocado. It’s a good idea to weigh your avocado because you have a more accurate number of points. The avocado was 32 grams (2pts). There’s no recipe for the dressing. It was 1 tbsp PB2, tamari, garlic, ginger, soy yogurt and a touch of lemon juice. I counted the dressing as 1pt for the PB2. Eat the rainbow!
